Why You’ll Love this Banana Microwave Bread
Craving a slice of warm banana bread, but don’t feel like baking an entire loaf? Try this super easy microwave mug cake recipe! It only takes a few minutes and results in a perfectly tender treat with the banana flavor you know and love.
This recipe includes the option to add chopped walnuts to the batter and also shows you how to make a homemade caramel sauce for even more indulgent goodness. It’s especially great if you just have one banana that you need to use up!
Ingredients
- Ripe Banana: Has the perfect amount of sweetness and tender texture.
- Egg: Acts as a binding agent for your banana bread.
- All Purpose Flour: You could also use something like cake flour, but all purpose is what I usually have on hand.
- Granulated Sugar: Just plain white sugar! This goes in the batter and you’ll also use it to make the homemade caramel.
- Vanilla: For some warm and sweet flavor.
- Baking Powder: Helps give the banana bread a light and tender texture.
- Chopped Walnuts: These are optional but add a nice nutty crunch that pairs perfectly with the banana flavor.
How to Make Microwave Banana Bread
- Use a fork to mash a single banana in a bowl.
- Crack an egg into the bowl and use the fork to combine with the mashed banana.
- Add flour and sugar, then mix well.
- Pour in a splash of vanilla extract.
- Stir in the baking powder.
- If you’re using them, fold the chopped walnuts into the batter.
- To make the caramel, combine sugar and water in your mug and microwave until it’s browned. Give the caramel a swirl to coat the inside of the mug.
- Spoon the batter into the mug with the caramel and microwave for 90 seconds to 2 minutes. Turn the banana bread out onto a dish and enjoy!
Expert Tips for Banana Mug Cake
- Use a toothpick to check for doneness. Insert into the center of the banana bread and if it comes out clean, it’s ready to eat!
- Cooking time will vary pretty wildly depending on the size and power of your microwave. You might need to do a couple of test rounds before you find the perfect cooking time for your banana bread.
- Make sure whatever glass or mug you use is sturdy, microwave safe, and able to withstand any sudden temperature changes.
- Keep a close eye on the sugar while it’s in the microwave. Once it reaches a rich amber color you can take it out. If you microwave it any further, it’s easy to burn the caramel.
Variations and Substitutions
- Instead of walnuts in the batter, you could also add chocolate chips, cinnamon chips, peanut butter chips, crushed peanuts, or even a swirl of cinnamon sugar.
- Top the banana bread with a dollop of dulce de leche for an extra decadent treat.
- Dust the top of your banana bread with a bit of powdered sugar for added sweetness and presentation.
- Use another kind of extract like almond extract to slightly alter the flavor.
- Feel free to use more or less sugar depending on how sweet you like your banana bread.
FAQs
The riper bananas get, the sweeter they are! That’s why most banana bread recipes or other baked goods using bananas will call for ripe or overripe bananas. They’ll also be softer and easier to work with.
All purpose white flour works just fine, but if you have something like whole wheat flour, almond flour, or oat flour, those will all work as well.
This is usually the result of overmixing the batter. Be sure to stir everything together until just combined. You may have a couple of lumps here and there, but if you try to mix until it’s perfectly smooth you might end up with tough banana bread.
