Fresh Strawberry Cupcakes 

WITH BUTTERCREAM FROSTING

A delicious sweet treat full of fresh and fruity flavor!

Cupcake Ingredients:

2 Eggs ⅓ c Sour Cream 1 tsp Vanilla Extract 1 ¾ c Cake Flour 1 ½ tsp Baking Powder ½ tsp Baking Soda ½ tsp Salt 1 c Sugar ½ tsp Lemon Zest ½ c Unsalted Butter ½ c Whole Milk 1 c Finely Chopped Strawberries

1. Whisk Wet Ingredients

In a small bowl, whisk together eggs, sour cream, and vanilla.

2. Mix Dry Ingredients

In the bowl of a stand mixer, mix all other ingredients besides the milk.

3. Combine!

Mix the wet ingredients into the dry a little at a time until fully incorporated.

4. Add The Milk and Strawberries

Mix in the milk. Then, fold in the strawberries.

5. Bake!

Fill cupcake liners and bake in a 325 degree F oven for 25 minutes.

Frosting Ingredients:

1 c Unsalted Butter ¼ c Strawberry Puree ½ tsp Salt 2 c Powdered Sugar

1. Beat the Butter

Beat the butter until light and fluffy.

2. Mix in the Rest

Mix in the strawberry puree, salt, and powdered sugar a little bit at a time.

3. Pipe the Frosting

Pipe the frosting on top of the cooled cupcakes.
