Impressive and easy to make, this quick microwave flan is perfect when you're craving an elegant dessert for one! This recipe makes 2 servings of flan, but you could easily cut it in half for a single serving.
Add a tablespoon of sugar to a microwave-safe glass cup and just enough water to dissolve.
Microwave the dissolved sugar for 2 minutes.
In a bowl, crack the eggs then add milk, sugar, and vanilla.
Whisk until fully combined.
Once the sugar has caramelized, carefully swirl it around the bottom of the glass and let it cool slightly.
Spoon half of the egg custard mixture into the glass cup.
Microwave for about 5 minutes, keeping an eye on the flan to avoid overflow.
Once a knife comes out of the flan clean, transfer to an ice bath for a few minutes, then allow the flan to set in the freezer. (Depending on your glass, you may need to wait a few minutes before chilling the hot glass right out of the microwave.)
Place a plate or another flat object over top of the glass and quickly turn it oven, then let the flan shake loose and enjoy.
